Spicy Red Beans and Rice

This recipe has a delicious spicy and robust flavor which I always enjoy with a side of brown rice and usually pair with roasted chicken and broccoli.  This dish is  loaded with a complete form protein when you add the rice, and it would be a great alternative for someone following a vegetarian or vegan lifestyle.

To get started you’ll need:

1)   2 cups of dry red beans

2)   1/2  white onion

3)   1 teaspoon of minced garlic

4)   1 bay leaf

5)   1 stalk of celery

6)   1 teaspoon Italian seasoning

7)  1/2 cube of vegetable bouillon

8)   3 cups water

9)   2-3 Chipotle peppers in Adobo sauce (adjust for taste)

10)  1/2 teaspoon of Cayenne Pepper

11)  1/4 teaspoon of chili powder

12)  Few Dashes of Chipotle Hot Sauce

13)  1 teaspoon of Worcestershire Sauce

14) 1/4  teaspoon  sea salt

15) 1/4 teaspoon course black pepper

16) 1/2 teaspoon cajun seasoning

17) 1 tablespoon of Olive Oil

First I would soak the beans according to the instructions. If not overnight then by boiling them for a few minutes and then soaking them for  2  hours.  Add the olive oil to the pot and heat until warm. Add diced onion and celery to the oil to saute.  Once onion and celery are tender add seasonings such as garlic,  cajun seasoning, chili powder, Italian seasoning,  and cayenne pepper to unleash flavors.  Add three cups of water to pot along with the vegetable bouillon which should dissolve.  Proceed to add pre-soaked red beans.  Include chipotle peppers in Adobo sauce, bay leaf,   Worcestershire sauce,  along with salt and pepper.   Let simmer until tender (roughly an hour)  and feel free to adjust ingredients to taste.  Enjoy!
